    15. Prepare 1 cup Panko breadcrumbs

    Starting at short end, roll up tightly, using foil to start roll and tucking in spinach leaves; seal ends. Sprinkle with the pepperoni, mozzarella cheese, mushrooms, pepper rings, green pepper and olives. Roll up, jelly-roll style, starting with a long side; pinch seam to seal and tuck ends under. Position loaf with seam side down; brush with egg whites.

    3. Roll end of mixture using the wax pepper as a base
    4. Bake 50 minutes until almost done(120 temp or so). i use a broiling pan to catch the grease. Sprinkle top with pepperonis and cover with remaining cheese
    5. Bake 10 to 15 minutes until beef is cooked through. Let stand 5 minutes before serving

    Starting from the short end, carefully roll up meat, using the foil or waxed paper to lift. Seal the edges and ends of the meat. Put a layer of pepperoni in the middle. Put the mozzarella on top of the pepperoni. Cover the sides and top of the mozzarella with more pepperoni.
