    More like a breakfast burrito than a taco. I used ground turkey breast breakfast sausage to cut back on the fat colby/jack cheese and I mixed the salsa in with the eggs & sausage mixture. Also used large flour tortillas instead of corn tortillas.

    1. In a large skillet cook breakfast sausage until cooked through. In a bowl beat the eggs with a table spoon of butter. Then add the eggs to the breakfast sausage stirl till eggs are done. Then turn off the heat.
    2. In a small pot cook the bacon until slightly crispy. You dont want them to crunchy but you don't want them to rubbery either. With a slotted spoon put the bacon in the pan with breakfast sausage and eggs. You want the bacon grease to stay in the pot.
    3. In the pot with the bacon grease add the can of refried beans. You may need to drain a little grease. Let the beans boil and then turn off the heat.
    4. You can either heat your tortillas up in a pan or in the microwave.
    5. On your tortilla spread beans then add your breakfast sausage, bacon, and eggs, then your cheese.

    Then load up the tortillas with beans, eggs and your desired toppings and enjoy while they are nice and warm! If you are serving these breakfast tacos in the morning and would like to save yourself some time, feel free to prepare the refried beans the day before. If you like breakfast burritos, you will LOVE these breakfast tacos. It's essentially the same yummy ingredients as a breakfast burrito but in cute mini taco form!
