    1. Peel and cut up the yam into big chunks. Wash and transfer to a pot. Add water and salt and boil till soft. Drain out the water and set the cooked yam aside.
    2. Cut up the tomatoes, peppers and onions.
    3. In a clean dry pot, pour in the cooking oil and turn on the heat. Once hot, pour in the chopped tomatoes, peppers and onions and the garlic ginger paste. Add the seasoning cubes, curry, salt, thyme and mixed spices. Mix and cover the pot. Allow to cook for 5-10 mins.
    4. Meanwhile break the eggs into a clean bowl, add a pinch of salt and beat.
    5. Once the sauce is cooked, add the beaten eggs, mix slightly and cover the pot. Allow to simmer on low heat for 5mins.
    6. Stir lightly again, taste for seasoning, adjust where necessary and turn off the heat.
    7. Serve with the boiled yams.
