    2. Put oil in pan and place in oven.
    3. Beat egg and stir in cornmeal, milk, &sugar. Remove extra water from cracklin's and fold them in.
    4. Remove pan and pour oil in bowl mix a little then pour mix in pan and place in oven. Cook for 20 to 25 minutes. Remove butter top of cornbread then put in oven for 5 or 10 minutes. I turn my oven off and leave it in for a while.
    5. If you need more cornmeal do so but don't forget to a a little more milk as well. Enjoy!

    Make sure bacon fat is HOT before pouring in cornbread batter. Combine the cornmeal, soda, and salt; stir in the eggs and buttermilk. The size of the cracklins will depend on how large the chunks of fat were when you started. I had diced mine up pretty small as they say that helps the fat to produce more liquid during rendering.
