    Crab has always been my favorite type of shellfish, but I have never really cared much for crab cakes. The overpowering presence of seasoned breadcrumbs used in most recipes interferes with the sweet and delicate flavors of the fresh lump crabmeat. Our region is known for good seafood, and crab cakes are a traditional favorite.

    The ingredients needed to make Crab Cakes:

    1. Prepare 8 oz Package of crab meat coarsely chopped (real lump or imitation is fine)
    2. Take 2 cup Seasoned bread crumbs (reserve about 1/2 cup)
    3. Take 1/4 cup Minced onion
    4. Get 1/2 A Jalapeño minced or about 4 minced slices from a jar
    5. Take 1/4 cup Mayo
    6. Take 1 Old bay seasoning
    7. Take 1 tbsp Oil

    In a medium bowl, stir together crabmeat, panko, and parsley. Crab cakes are a classic restaurant favorite, but it's easy to make them at home. Serve this warm, crispy seafood dinner with a side salad and dipping sauce for a complete crab cake meal. This was the first time I've ever made crab cakes and they were the best ones I've ever tasted!


    Instructions

    Steps to make Crab Cakes:

    1. Add crab meat, onions and jalapeños to a mixing bowl. Season with old bay seasoning to taste. Add 1 and 1/2 cups of bread crumbs to crabmeat mixture.
    2. Now Add mayo and slowly mix with a fork until mixture is thoroughly moist. If it seems a little too dry you can always add about a teaspoon or so. You want it to be a little firm so the crab cakes won't fall apart while frying. Form mixture into balls and let set in the refrigerator for at least 30 mins.
    3. Add the remaining bread crumbs to a plate. Set aside. Pour oil in skillet and set range eye to medium heat. Roll each crabmeat ball in the breadcrumbs. Make sure they're coated evenly.
    4. Place crabmeat ball in between your hands and press lightly enough to form patties. Add to skillet. Cook patties on each side for about 6 minutes or so or until golden brown on each side.
    5. Drain on paper towels
    6. Serve with a salad and remoulade

    I did add old bay, used a little extra crabmeat and rolled them lightly in bread crumbs mixed with parmesan cheese because I wanted to seal in the flavor and wasn't sure if they would stay together properly without. Heat oil in a large skillet over medium heat. Maryland crab cakes use blue crab which is entirely different in shape, texture and taste to king crab.
