    21. Take 8 thin slices fresh mozarella cheese

    Dip chicken in egg substitute, then roll in crumbs. Place panko in a second shallow dish. Dredge in panko, pressing firmly to adhere to both sides of cutlets. Place coated cutlets on baking sheet beside foil square.

    6. Serve chicken on pasta. Serve extra grated parmesan cheese at the table
